Oreo Ice Cream Pie ~ Can't Tell It's Sugar FREE

YUMMY SUMMER TREAT

This recipe is from my friend and fellow screenwriter, Neringa who got this recipe from Rose, (thank you Rose,) who didn't give her specifics except the ingredients,
and the "smushing" part.
Looks like a cold treat for summer, and the 4th of July is coming up!

Ingredients:
  • 1 box of SUGAR FREE Oreo Cookies
  • 1 1/2 Gallon of NO SUGAR ADDED ice cream, I prefer Edy's Coffee, but also love Fudge Tracks and Vanilla always works.
  • Optional Whipped cream for those who can have it.
(Note, you do not have to use sugar free anything, but this is great for diabetics and there is no after taste)




I TAKE A BOX OF SUGAR FREE OREOS, crumble them in my Cuisinart, then take 1/2  of the cookies and smush them into a pie pan or spring form ( depends on how much ice cream I add). The creamy white center of the Oreo holds the cookie crust together.
In a bowl, I mix the slightly softened ice cream and the other 1/2 of the crumbled Oreos and layer over the crust, smoothing the surface.
Freeze for 4-6 hours before serving.  If using a spring form, remove form, cut and serve.
Garnish with whipped cream for those who can have it.
An optional way of preparing this and still have it be low cal, but not strictly diabetic friendly, is to use the sugar free ingredients, freeze for a couple of hours, then layer whipped cream on top, and freeze the 4-6 hours.  Serve and enjoy.  Repeat.
