Last Friday of the Month Recipe: Lentil Salad From Jana Richards and her Excerpt from There Goes the Groom





Jana Richard's Lentil Salad


Ingredients for salad:

19 oz. can lentils, drained
 4 oz. crumbled feta cheese
1 red pepper, finely chopped
2 green onions, sliced
1 clove of garlic, crushed


Dressing:

2 T. lemon juice
1 T. olive oil
¼ tsp. dried thyme
¼ tsp. salt & pepper

Mix all ingredients together, then toss with dressing. Let sit in the fridge for a couple of hours before serving.

    Both your recipe and book blurb for "There Goes the Groom" sound deliciously inviting. I love lentils and romance, so maybe I'll try the two together.

    By the way, I love your given name. Until recently, I had only heard of that name once--as that for my main protagonist in my debut novel. You make twice more, along with the new President of Lifetime Movie Network.
